Contact your hosting provider and any reputable host will want to make you happy and transfer the site for you at no charge! That will make the process really easy for you as their client :)
If you are just redesigning their site, the domain should not need to be transferred at all.
If you will also be hosting their site then they will need to point the domain to your nameserver settings.

Try to choose a name that can be branded or sounds good when you say it. You want people to be able to remember the name after they hear it once...
